Provenance: Produced from olives only Italian origin, gathered at the right time of ripeness. The extraction is done with mechanical cold, or at a temperature below 27°. The olive varieties are prevalent from the province of Bari.

Raw: enriches the taste of white and red meat, raw vegetable salad with cooked, intense flavors, appetizers in general, sauce of cooked vegetables and braised.

Odor: fruity olive green and herbaceous with hints of almond.
Flavor: taste sweet and balanced, with very slight bitter, slightly spicy barely perceptible. Aftertaste of fruity olive, almond with hints of herbaceous.
Provenance: Produced from olives only Italian origin, gathered at the right time of ripeness. The extraction is done with mechanical cold, or at a temperature below 27°. The olive varieties are prevalent from the Gargano, province of Taranto and province of Bari.

Raw: enriches the taste of fish and white meats, salads and raw vegetables cooked, the "carpaccio", "bresaola", appetizers in general and sauces such as mayonnaise.

Color: straw yellow with greenish.
Odor: ffruity medium.
Flavor: soft and balanced.
Provenance: Produced from olives only comes mainly from the Italian variety Cultivar Ogliarola Coratina and harvested at the right time of ripeness with mechanical facilitators. The extraction is done with mechanical cold, or at a temperature below 27°. The olive varieties are prevalent from the province of Bari (about Bitritto).
Suggestions for consumption:
Raw: enriches the taste of white and red meat, salads of raw vegetables, cooked vegetables, "bresaola", "carpaccio", starters in general and "bruschetta".
In cooking: is suitable for the preparation of any dish.
